Echizen has been producing handcrafted knives for over 700 years. During this exclusive private tour, you will visit a traditional workshop, observe the forging and polishing process, and learn directly from skilled artisans about the history and techniques behind Echizen blades.

You will then participate in a hands-on sharpening course using traditional whetstones. Under expert guidance, you will learn proper angle control and sharpening techniques to maintain a razor-sharp edge. The experience includes your choice of a Santoku (all-purpose) or Ko-Deba (fish preparation) knife to take home.

A local Fukui soba lunch can be arranged after the workshop, or you may choose to explore the area on your own before returning to Kanazawa.
